Ginger Edamame




Skillet Edamame with Ginger essential oil Recipe 
  • 1 tablespoon olive oil
  • 3 tablespoons sliced green onions
  • 1 carrot, diced
  • 1 cup vegetable stock or broth
  • 2 cups fresh or frozen (and thawed) shelled edamame (we get ours at Costco)
  • ½ cup snow peas, trimmed and diced
  • 2 drops Ginger essential oil
  • 1 drop Black Pepper essential oil
  • Salt to taste

Heat olive oil in a skillet over medium heat. Add green onions and carrot and cook, stirring occasionally, until green onions are soft, about 3 minutes. Add vegetable stock, edamame, and snow peas and bring to a boil. Reduce heat and simmer until edamame is tender, about 10-15 minutes. Remove from heat, add Ginger, Black Pepper, and salt. Adjust seasonings to taste, and serve with rice.
